Ingredients:
4 Firm Pears
1/2 cup Raisins
2 cups water
1 teaspoon Nutmeg
1 cup Brown Sugar
1/2 cup Bourbon
6 teaspoons Masala Chai Tea
1 Cup Brown Sugar
Pre heat oven 350 degrees. Place 2 cups of water on stove and 6 teaspoons of Masala Chai Tea.
Bring to boil and let steep for 15 minutes and hold on the side.
Core pears out and place in baking dish. Pour 3/4 cup of chai tea over pears. Sprinkle with
Nutmeg and a light touch of brown sugar, cover and bake for 30 minutes. At 15 minutes baste
with the reserve, at 30 minutes uncover baste again and bake for additional 10 minutes. The
pears ought to be soft, but not falling apart.
Bourbon Glaze:
Place 2 cups of raisins in a bowl add 1/4 cup of bourbon and a 1/4 cup of reserve chai
and let soak for 2 hours. Drain off the excess liquid, it is to be used in the glaze.
In a heavy sauce pan place 1 cup brown sugar on low, heat and stir constantly with
a wooden spoon. The sugar will begin to melt and turn a delious brown color. Add
a 1/4 of bourbon and continue stirring, the syrup will begin to thicken quickly, add more
of the reserve and remove pan from just before boil point.
To Serve:
Place warm pear on a heated plate and gently pour bourbon glaze over the pear, and add 5 -6
raisins per pear and serve. If desired place a xcoop of vinallia ice cream on the side and pour
glaze over it and garnish with raisin. This is a dessert everyone will love!
